The Macallan Distillery, situated in Craigellachie, Moray, is one of Scotland’s biggest and most esteemed single malt manufacturers, with over half a million cases of Scotch sold annually. The distillery was founded in 1824 and skillfully used sherry casks to age their expressions, earning them a reputation for elegance.These barrels, which come from Jerez, Spain, were the only ones used in the production for many years until the distillery increased the number of barrels it could use. This allowed them to create a variety of new, more complex expressions that highlight their distinctive approach to single malt Scotch, including the more conventional ex-bourbon barrels.

One of these new breed of whiskies, the Macallan 12-Year Double Cask, was introduced in 2016 and is rich and somewhat sweet due to the use of two different kinds of sherry casks. 100% malted Scottish barley is used in the fermentation and double distillation processes of each batch of this Scotch. The resulting spirit is then matured in a mix of European and American barrels. The finished whiskies are then wedded after a full twelve years of ageing, and at last they are brought to proof, bottled, and labeled.

With its vivid golden hue, this Scotch offers a hearty dose of butterscotch flavors complemented by hints of candied orange, caramel apple, vanilla custard, and fresh wood with every drink. The palate is subsequently treated to honeyed aromas of citrus, wood spices, raisins, and caramel, all of which come together nicely to create a warm, sweet, and lingering finish with a hint of oak.
